This week I am making some of that pizza my kids really love and, as a special promotion treat, it will have a buffalo mozzarella topping!

It is early days at the flying italian so I am still in a promotional mood. Come and take advantage of this unstoppable tendency to give away wonderful food: any main, platter or pasta and amazing cake with my special mascarpone sauce will be £9.95 only.

welcome to the first proper week of the flying italian, "the most exciting pub food in brighton!"*

I source the best ingredients available either locally or in Italy and try to create dishes that are both deeply rooted in tradition and open to new influences.
An example? Tuscan pecorino and Ouse Valley Chili Jelly. Or my pasta with fresh local mackerel and pomodorini from Apulia (coming soon).. Two different sets of fantastic ingredients that can only be put together here and now.
