Here's the answer.
My name is Carlo Albertoli.
I'm Italian, 42, and I moved to the Brighton from Milan in 2001, to follow my partner, Zoë, eager to come back home.
Before leaving Italy I had built a certain reputation in the music business. I then acquired a nice consultancy contract with an Internet company who restructured and cancelled the whole business division I was working for soon after.
Luckily, my greatest passion had always been good food (and wine!) and I have been cooking for families and friends for more than 20 years, during which I acquired an extensive knowledge of all the wonderfully varied Italian regional cuisines. I had researched extensively the various sources of traditional produce: cheeses, meats, vegetables, olive oils etc.. because Italian home cooking is all about the quality of the ingredients and not some esoteric techniques.
It then came natural to decide to turn this passion and this amount of experience into a job, which is not only about preparing food but also about sharing the simple principles of Italian food culture and the knowledge I acquired.
I set up La Cena and started with organizing Italian food nights in pubs. After a while I moved into personal cooking, which allows me a more direct contact with people.
To sum up, I have no classical training and I have never worked in a restaurant, but I'm perfectly confident that you'll be satisfied by the service I provide. Confident enough to offer a full refund should you not be satisfied (it never happened...)
