this month at the flying italian: agnolotti del plin!
agnolotti del plin are a rare delicacy from piedmont.
these tiny handmade ravioli are so inherently regional that in my first 40 years in italy I only managed to find them twice.
then i moved to the uk, entered the food business and discovered some wonderful suppliers: gastronomica imports nice and rare italian specialities for their seminal borough market stall and for a handful of top italian restaurants.
AND the flying italian.
so here they are. will be served with either with a simple butter and sage sauce or "in brodo": with a stock flavoured with a hint of white truffle oil...
agnolotti will be available on previous booking only, as a stand alone dish or as part of this month's italian food experience.
