this month at the flying italian: agnolotti del plin!




agnolotti del plin are a rare delicacy from piedmont.
these tiny handmade ravioli are so inherently regional that in my first 40 years in italy I only managed to find them twice.
then i moved to the uk, entered the food business and discovered some wonderful suppliers: gastronomica imports nice and rare italian specialities for their seminal borough market stall and for a handful of top italian restaurants.
AND the flying italian.


so here they are. will be served with either with a simple butter and sage sauce or "in brodo": with a stock flavoured with a hint of white truffle oil...


agnolotti will be available on previous booking only, as a stand alone dish or as part of this month's italian food experience.

The best meals I have ever had never involved choosing from a menu.
They involved choosing somewhere to eat - ie: someone to trust - then sit down, relax and enjoy the surprise of what would come next and eat. and eat. and eat.

I would like to recreate that with the
italian food experience


All of the following is what was served on the 27th of November. All courses are in tasting size portions and are acompanied by my own focaccia:

1. Mortadella with Black Truffle, Olives
2. Piadina with Stracchino and rocket
3. Crostini with Chickpea & Porcini stew with S Daniele Ham
4. Buffalo Mozzarella + Semi dry cherry tomatoes
5. Tuscan Roast Artichokes, Wild Boar Salame
6. Peperoni Alla Napoletana (sort of)

7. Foursome of Ravioli
8. Risotto with Porcini and Fillet of Neck Of Lamb (or pecorino)

9. Buffalo Ricotta with Sussex Chili Jelly
10. Chocolate & Absinthe Cake


All for a whopping £25 per person (i'm in a pub after all). Most of the courses are suitable for vegetarians. If not, a vegetarian option is provided.


"The best food I've eaten outside of Italy" said one of the happy diners, before booking again.


The Italian Food Experience is available only if booked at least 24hr in advance.

this week at the flying italian: risotto with porcini! big pizza to share



this week's specials are:
- a fantastic risotto, with porcini and a hint of white truffle oil
- tortellini with wild mushrooms
- flllet of neck of lamb served with plain risotto

and my own tiramisu'
