the flying italian menu: 13th to 17th October 2009

welcome to the first proper week of the flying italian, "the most exciting pub food in brighton!"*
I source the best ingredients available either locally or in Italy and try to create dishes that are both deeply rooted in tradition and open to new influences.
An example? Tuscan pecorino and Ouse Valley Chili Jelly. Or my pasta with fresh local mackerel and pomodorini from Apulia (coming soon).. Two different sets of fantastic ingredients that can only be put together here and now.
